Berry Lemon Tart

So the last couple weeks have been pretty busy around here. My oldest daughter graduated from high school last week and my Mom, who lives in Oregon, came out for it. Lots going on!! For the grad party I made a lot of our fav’s for the brunch themed party.

I huge hit were the mini strawberry tarts. I just kinda made these up in my mind and stirred it up.

I started with making sugar cookie dough. I am sure pre-made dough would work too.

Sugar cookies:
1/2 cup butter (softened)
3/4 sugar
1 beaten egg (room temp)
1 tsp vanilla
1 1/2 cups flour
1 tsp cream of tarter
1/2 tsp baking soda
3/4 tsp salt

In a mini cupcake tin insert paper cup liners. Roll a small amount of dough-quarter size balls- and drop in cups. Bake in oven for 5-6 minutes. While still warm use spoon to flatten “cookies” in liner.

Filler:
1 large tub whipped topping (16oz)
2 bricks of softened cream cheese
1/3 cup sugar
2 Tablespoons lemon extract

Whip filler ingredients with whisk attachment on stand mixer or hand mixer.

Add filler mixture into piping bag and add to top of completely cooled “cookies”.

Top with strawberry and/or other fresh berries.
